The one I’m offering today very often is a great solution for a quick snack, spread on a slice of bread. You can eat it straight from the jar, and if you work until late like me and you enjoy the food, you can eat it in front of your computer. Besides, exactly sun-dried tomatoes nutritional yeast flakes vegan pesto  is the secret ingredient of many of my recipes.

If you are properly planning your time and have a blender, you can spend 20 minutes a week to create a home pesto with high quality ingredients the way you prefer them. As a plus you will also have a good back up plan for a midnight snack and you will have a super delicious ingredient for a lot of your recipe. I always keep one jar of it in the fridge. I admit that for today’s photos I bought the tomatoes from the store. I didn’t used those which I prepare myself but I used a trusted brand and the result was very satisfying. And so here is the recipe for my pesto.


What do we need:

150 g of sun-dried tomatoes soaked in olive oil (you really need high quality tomatoes if you have not prepared them).

3 tablespoons of nutritious yeast flakes

50 g cedar nuts

70 ml of olive oil (you can also use the one in which tomatoes have been soaked)

2 pcs of dried stoneless dates

1-2 cloves of garlic

pinch of salt

1 -2 springs of thyme

How to prepare:

Here’s the simplest:

1. Put all the ingredients in the blender and mix until you get a homogeneous mixture.

You can keep the pesto in the fridge for about 2 weeks if you can resist it for so long 🙂

P! S !: Do not fill up the container where you will store the pesto, leave a little space to fill with pure olive oil, so you will increase its shelf life.
